Semester I – French & Balkan CuisineBegin your journey with 19 weeks of intensive training in French and Balkan cuisine. You will master essential cooking techniques: knife skills, stocks, mother sauces, fish, poultry, and meat cookery, while learning the precision and philosophy that define French gastronomy. Then, guided by renowned local chefs, you’ll discover the rich culinary heritage of the Balkans – Bulgarian, Greek, Serbian, and Turkish traditions – exploring rustic stews, vibrant salads, iconic and nearly-lost dishes, and innovative fusion menus that bridge two culinary worlds.Semester II – French PastryOver 16 weeks , full day training, you will enter the universe of French pastry artistry. From pâte à choux, éclairs, and tarts to entremets, macarons, and haute couture chocolate work, you will build strong foundations while honing creativity and precision. Each day follows a professional rhythm: chef’s briefing, step-by-step demos, hands-on practice, and convivial tastings. By the end, you will be able to craft refined desserts that delight both eye and palate, combining technical excellence with artistic expression.Semester III – French BakeryConclude your diploma with 16 weeks devoted to the art and science of bread. From classic sourdoughs, baguettes, brioches, and viennoiseries to innovative gourmet creations, you’ll explore both tradition and modernity. The program extends beyond the classroom with visits to local mills and flour producers, hands-on practice in artisanal bakeries, and baking in an outdoor wood-fired oven. You will learn not just to bake bread, but to understand its history, ingredients, and cultural meaning – mastering a craft that is both soulful and essential.Accreditation

Beyond Technique - Entrepreneurship & Innovation The Diploma of Gastronomic Excellence goes further than professional training. In parallel with your culinary practice, you will dive into entrepreneurship, product design, photography, permaculture gardening, and clean food sourcing. You will learn how to create, brand, and grow your own food venture, anchored in creativity, ecological awareness, and authenticity.
